This cookbook is amazing…exotic, delicious and good for you! It contains 182 recipes based on the Hunza diet using unprocessed whole foods and essential oils for flavoring.

It begins with a forward Daniel Pénoël, M.D., a French medical aromatherapist who has practiced aromatic medicine for over 20 years. Dr. Pénoël says about the recipes in Prince’s book, “Even without the addition of essential oils, these recipes would help anyone keep toxic intestinal bacteria to a minimum. The essential oil quantities she specifies are just right for creating a therapeutic synergy. …these powerful aromatic molecules will neutralize toxins remaining in the intestinal tract from the past junk food diet. …The overall effect on the immune system for all age groups is tremendous - a fact that many doctors and therapists in France have known for years.”

It is essential to use therapeutic-grade essential oils, preferably with organic certification (especially citrus oils) that are steam distilled. A good brand to look for is Oshadhi, available locally at New Seasons. There are other brands available on the Web. The oils aren’t cheap, but you only use one or two drops for a recipe, and when you consider the price of herbs, it becomes pretty reasonable.

In addition to a primer on essential oils, the book whole chapter devoted to tips and another one on food preparation, including detailed instructions on sprouting seeds and nuts, making sprouted dough, making sushi and nut butters.
